1½ c. homefries (or 2 potatoes, prepare as per recipe below)
¾ c. cheddar cheese, shredded
1 T. fresh rosemary, or 1 t. dried, chopped fine
2 T. fresh parsley, or 2 t. dried
8 eggs
¼ c. milk
Salt and pepper to taste, approx.. 1/8 t. each
1-1/2 c. cooked ham, diced

Homefries:  Scrub the potatoes, redskins are best, and cube into approx. ½ “ pcs.  Pour enough olive oil into frying pan (cast iron is best) to coat bottom.  Season generously with 1T. Weber Veggie Grill Seasoning mix. Cover.  Brown, stirring occasionally, over medium heat until potatoes are tender.

Meanwhile prepare a 10″ deep dish pie plate  or 2 qt casserole dish by spraying with PAM or equivalent.  Preheat oven to 350 degrees.

In a large bowl beat the eggs with milk, add the cheese, herbs, salt and pepper and mix well.  Spread the potatoes in the casserole.  Add the meat on top of the potatoes.  Pour the egg mixture over all.

Bake in the preheated oven for approx. 40 min.  A cook’s trick to ensure the center gets baked before the edges get too browned: Spray a small round cookie/biscuit cutter with cooking spray and place it in the center of the egg mixture.  This draws the heat to the center for even baking.
