In Pennsylvania September always brings crisp, tasty apples.  One of our favorite ways to enjoy those apples is to include them in many recipes.  This recipe is a long time tradition in the family.  It’s quick and easy to prepare.  The texture is more on the heavy side and “makes for a good dunkin’  cake”, as the PA Dutch would say.

4 c. flour
2 c. sugar
1 c. butter, softened
1 t. salt

Mix all ingredients above with a pastry blender until crumbs.  Take out ¾ c. of crumbs and set aside.

2 large eggs, slightly beaten
1c. milk
1/3 c. unsweetened applesauce
2 t. baking powder
2 apples
1 T. sugar ‘n cinnamon mix

To the large bowl of crumbs add 2 beaten eggs, 1 c. milk, 1/3 c. natural unsweetened applesauce, and 2 t. baking powder.  Stir until well blended.

Preheat oven to 350 degrees.  Prepare two 9” pie plates by greasing with ½ T. butter.  Slice and remove skin from 2 medium apples.  Pour half the batter in each pie plate, then arrange apple slices on top of batter.  Sprinkle with reserved ¾ c. crumbs. Sprinkle sugar and cinnamon mix on top of each cake.  Bake for 25-30 min. or until toothpick inserted in center comes out clean.
