Baked Oatmeal

3c. old fashioned oatmeal                              ½ c. mixed dried fruit (or raisins)
2 c.  lowfat or skimmed milk                          1 tsp. Salt
1½ c. water                                                     ½ c. nuts, optional
3/4 c. brown sugar                                          2 tsp baking powder
½ c. butter, melted                                         1 tsp. Cinnamon
2 eggs, beaten                                                 1 tsp. Vanilla
¼ c. honey, or white sugar

Mix all ingredients together and pour into greased 9 x 13 baking pan.  Refrigerate overnight.  In the morning bake 25 minutes in 350 degree oven, or until lightly browned around the edges and looks solid.  Serve with warmed milk.
